evie's roasted veggies
took Evie's advice and roasted up the squash and eggplant with garlic, onions and olive oil...steamed the green beans with some garlic for just a minute and then tossed them in too....seasoned with salt and some of the espellette chile powder...she was right, it was very good
sorry, Evie...left out the tomatoes...just can't bear to cook them, they're so good just the way they are!
