guacamole al fresco

so, we've been looking for something to do with tomatillos besides salsa and recently found a recipe for tomatillo guacamole...had to get the avocados at the grocery store, but everything else is from one of our boxes...
had to stop and take a photo before mixing it all together...wish my camera skills would do the veggies justice
if you have any good ideas for the tomatillos, please post us a comment and let us know what you're doing with them...

I have a recipe for tomatillo salsa which is really good and easy. You can serve it alongside other dishes or use it as a sauce for enchiladas. I always get my tomatillos at Tierra as they are wonderful.

Tomatillo Salsa
Makes ½ cup
This uncooked green salsa has a somewhat tart bite to it. You can add a bit of sugar or stevia to sweeten it, if you like.
¾ pound tomatillos
2 green onions, chopped
3 tablespoons chopped cilantro
1 clove garlic, minced or crushed
2 tablespoons lime juice or mild vinegar
A pinch of sugar or a few drops of stevia
Put the tomatillos in a food processor and quickly pulse them until they are the desired consistency. Add to the chopped green onions, cilantro, garlic and lime juice or vinegar. Sweeten, if desired.
